Brings texture, smoothness and balances the cocktail's bitterness or acidity.



Combine Giffard Egg White in a shaker with your cocktail ingredients.  Add an ice cube and shake vigorously until the ice is dissolved in.

Pour into a glass and a thin (3 to 5mm) foam forms on the surface and will last about 30 minutes.
